Tasty Baked Sweet Carrots

As we know, Bugs Bunny was quite fond of the old orange sticks.  He had a point.  And I don’t mean the end of his carrot!  Carrots are tasty but an often overlooked vegetable and taken a great deal for granted.  Abused by boiling them within an inch of their little orange lives, the carrot deserves far more respect.  And in the gentlest of hands carrots can make the most marvelous side dish. The recipe that follows is a favorite in our house and so simple to do. Carrots are also high in vitamin A, and are so good for the eyes I now can (if I wish, but never like to brag) read this recipe and cook this in the dark!


1 lb Carrots (baby carrots if possible) sliced

½ Teaspoon salt

½ Tablespoon Olive Oil

½ Tablespoon Butter

½ Tablespoon Maple Syrup


Preheat the oven to 450 degrees

Combine carrots with the salt and the oil until coated fully.  Spread out evenly in a shallow baking dish

Roast in the oven for 10 – 15 minutes

While the carrots roast, use a saucepan to heat the butter until it turns golden brown.  Keep a careful watch as it can easily burn.  Once brown, remove the saucepan from heat and add the maple syrup

After 7 – 8 minutes remove the carrots and pour over the butter/syrup mixture and mix well

Return carrots to the oven until cooked.


Keep a watch on the carrots so they don’t burn.  They should be tender and brown to serve.  This is such a tasty side dish and ideal with plain cooked peas and beans.  I enjoy this as a quick side with a chicken breast which can sometimes be lacking in flavor.
