Recipes Vidalia Onion Side Dishes

This is a great side dish for any meat cooked on the barbeque.

Sweet Baked Vidalias

Method: Microwave bake
Prep time: 2 minutes
Cooking time: 3 minutes each

Ingredient: One sweet Vidalia onion per person

With the skin still on, wash and pierce vidalias all over with a fork. Cook for one minute in microwave. Turn. Cook for one more minute. Touch. The skin should ‘weep’ a little liquid where you pierced it. If not soft, cook for one more minute. Cut in half. Cut away ends and skin. Serve as side dish, or cut up inside sandwiches.
