Recipes Baked Cod


This delicious and healthy seafood recipe will easily serve two people and can be completed within half an hour. For the dish you will need the following ingredients:

Three hundred gram piece of chunky, fresh Icelandic cod loin, cut in half across the width

One table spoon of Artichoke Sauce

Two slices of Pancetta

Two large fresh sage leaves

1 table spoon of olive oil

juice of half a lemon

The first thing you will need to do is to preheat the oven to around two hundred degrees C or Gas Mark 6. With a sharp knife cut along the length of the cod loin to create a pocket in the flesh. Into this pocket pour the artichoke sauce, which will give the dish its distinctive and quite unusual flavor. Then simply take your freshly prepared slices of pancetta and carefully wrap them around each piece of fish ensuring that the ends of the pancetta are neatly tucked underneath the fish whilst it is baking in the oven. A little sea salt and freshly ground black pepper can be added at this stage to season and the sage leaves can also be used at this point. Tuck them in under the edge of the pancetta or if you prefer leave them on top of the fish.

Once you have completed your parcels transfer them onto a baking tray and drizzle luxuriously with the olive oil before simply baking in the preheated oven for roughly fifteen minutes or until the fish comes clean apart with a gentle tug with a fork. The final touch can be a quick sprinkle with some freshly squeezed lemon juice.

To serve simply place the Cod Parcels on a warm plate and serve with a selection of vegetables such as baby new potatoes and green vegetables such a mange tout, peas or runner beans.
