Best Bear Casserole

Wild game is somewhat of a treat in some households and for others, it is a staple. Deer, elk, snake and rabbit are all on the menu during the appropriate hunting season. There is one more tasty meat to add to the distinguished list and that is bear. Now there are certain things you want to do if you are going to prepare bear meat and one of them is to remove as much fat as possible. The reason for removing the fat is to reduce the amount of grease you will have during and after cooking. The other thing you need to think about is how you are going to cook the bear meat. One suggestion is to make a casserole.


2 lbs bear meat (cut into bite sized pieces similar to stew meat)

1 package of dry onion soup mix

1 can cream of mushroom soup

1 small can of mushrooms

1/2 cup of red wine

Hot cooked noodles or rice

This casserole is designed for the slow cooker.


Place everything into the slow cooker except noodles. Cook on low for 8-10 hours or until meat is tender. Serve over the noodles or rice. Another option is to add the noodles and cook together for the last 15-20 minutes of cook time. 

This casserole is a welcome smell and taste after a long day of playing in the snow. There is just something about bear casserole that makes a happy tummy and a happy family. This casserole also freezes well for up to a month (in a freezer safe container). This is even something you can easily make while on a hunting/camping trip, as long as you plan ahead. 

There is something to be said about the flavor of bear as opposed to other wild game and if you are not used to it, it can be a little strong. Bear meat is naturally greasy so you also have to be prepared for that (a piece of bread or a biscuit does nicely). All things considered, bear casserole is a delicious way to fix bear meat.
